What are æbleskiver?

Æbleskiver (or abelskiver, or ebelskiver) are traditional Danish pancake balls with soft, fluffy insides and crisp exteriors, cooked in a special pan with semi-spherical molds.  Imagine if a pancake and a beignet had a baby, with a Belgian waffle Godmother.

Æbleskiver translates to "apple slices" in English, from the Danish æble (apple) and skive (slice). The original treats were made by frying a slice of apple dipped in batter and the name “æbleskiver” persists, even though the traditional filling is no longer a common ingredient.  

The exact origin of æbleskiver is unknown. The most common origin story claims Vikings created the treats after a long battle by cooking pancake batter on their dented shields over a campfire. 

While the Viking-shield legend is a compelling tale, it's likely a myth, and the earliest known pans for making these spherical pancakes date to about 300 years ago in Denmark.
